Italian Culinary Experience with Vero Italian

On behalf of Casa Vinicola Zonin, Italy’s largest privately owned wine producer, we were invited to taste a preview of downtown Miami’s latest restaurant Vero Italian. It is slated to open in a couple of weeks and downtown Miami is in for a treat.  Although no official menu has been created, here is a sample of Chef Paolo Galloti’s creations paired with Zonin’s top recommended wines.

Wine: Sauvignon, Tenuta Ca’Bolani, DOC Friuli Aquileia Superiore 2011

Dish: Grilled polenta slices with cream & walnuts layered with crispy prosciutto

Wine: Calasole Vermentino, Rocca di Montemassi, IGT Maremma 2011

Dish: Grilled Portobello mushroom cup with roasted pumpkin filled with sautéed spinach & parmesan

Wine: Fiano, Masseria Altemura, IGT Salento 2011

Dish: Potato gnocchi with lobster, baby zucchini flower, and saffron bisque

Wine: Negroamaro, Masseria Altemura, IGT Salento 2010

Dish: Lamb cutlet and mint risotto

Wine: Ripasso, Zonin, DOC Valpolicella Superiore 2010

Dish: Italian menringue with wild berries compote and Zonin Prosecco gelato
