A potluck is always a great time to spend with the ones you love and play catch up with everyone’s life.  My most requested dish is my gooey creamy Mac and cheese. It is the ultimate comfort food and it will definitely make you do the happy dance. The best part is when I see people go for seconds and that my tray is empty. This dish is a success with the help of The Deen’s Bros: Ya’ll Come Eat cookbook except I changed a few things to make it my own. Hope you enjoy this recipe as much as my family and friends.

½ stick of unsalted butter, cut into pieces and softened

2 cups of uncooked elbow macaroni

4 cups of shredded four cheese Mexican cheese

4 ounces of cubed cream cheese (preferably Philadelphia brand)

1 cup of half and half

4 eggs

¾ cup of sour cream

½ teaspoon of salt

½ teaspoon of pepper

  1. Preheat the oven to 350 degrees Fahrenheit. Butter or use a non-stick spray on a 13 x 9 inch baking dish then set aside.
  2. In a pot of boiling water, add the elbow macaroni and cook according to the package direction. When the macaroni is cooked, drain out the water and return the macaroni to the pot.
  3. Add the cubed cream cheese and 3 cups of the shredded four cheese Mexican cheese to the macaroni and stir well. Then pour it in the buttered baking dish and set it aside.
  4. In a separate bowl, whisk together the butter, half and half, eggs, sour cream, salt, and black pepper. Then pour it over the macaroni in the baking dish.  Bake for 40 minutes, then sprinkle on top the remaining one cup of shredded four cheese Mexican cheese and let the dish bake for 5 more minutes. After baking, let the dish stand for a few minutes. Bon appétit!
